I came up with this recipe on a whim. I was craving BBQ flavor and bacon. There are a few on plan BBQ sauces you can buy in a store. I'm sure you can find some on Pinterest as well.
BBQ Bacon Chicken
(Print This Recipe!)
Serves 6-8
Ingredients:
1c. Any on plan BBQ sauce. Mrs. Criddle has a great one here
6-8 chicken breasts
6-8 slices bacon (I used thick cut)
Directions:
Preheat oven to 400. Trim fat off of chicken. Cut each breast in half width-wise. Coat chicken in BBQ sauce. Wrap once bacon slice around each piece of chicken. Spread more BBQ sauce on each piece of chicken. Place on a greased baking sheet or roaster pan. Put into the oven and bake 30-45 minutes. When internal temperature is 160, flip chicken over and broil for a minute or 2, to crisp up the bottom of the bacon.
Or, You can heat up a grill and grill them!

THM Recipe: Chicken Jalapeno Popper Casserole {THM - S}
I am currently in love with all things jalapeƱo! So, I took a recipe I found from Pinterest and turned it into a THM-friendly meal!
Jalapeno Popper Chicken Casserole (S)
(Print this Recipe!)
Serves 6-8
Ingredients:
2 jalapenos, diced small (seeds out)
4-5 chicken breasts, cooked and diced
2 cups cheddar cheese, shredded
2 cups Monterrey jack cheese, shredded
1 box Dreamfields rotini pasta, cooked.
3/4 cup heavy cream
1 1/2 cups water
1 pkg. 1/3 fat cream cheese
Directions:
Preheat oven to 350 degrees. Cook chicken and pasta. Dice chicken. Dice peppers. Put chicken, diced jalapenos, & pasta in a casserole dish (I used an 11x15 pan). Shred both cheeses. Bring cream, cream cheese, & water to a boil in a medium sauce pan. Slowly add in shredded cheeses, stirring until cheese is melted. Pour over chicken, jalapenos, & pasta. Mix together, put into the oven for 20 minutes covered. Uncover and bake an additional 10 minutes. ENJOY!

THM Recipe Review: Chicken Florentine (S)
Chicken Florentine (Pg. 46)
Pros: delicious, slow cooker meal

This is a recipe my whole family loves. Yes, my kids LOVE a recipe with spinach in it! I made it for our church's monthly fellowship meal, and so many women said it was amazing. It is SO easy to just throw everything into the crock pot and go on with my day. All I do at dinner time is shred the chicken and make some Dreamfields pasta. (you can also use zucchini noodles or spaghetti squash) My daughter gushes about this meal...telling me over and over again how good and yummy it is. I highly recommend it! The recipe as written in the cookbook feeds my family of 8 with leftovers.

THM Recipe: Chicken Pepper Spinach Stir Fry (E)
I came up with this on my own after getting home from my exercise class. I was hungry, and dove around in my fridge until I came up with this!
Chicken Pepper Spinach Stir Fry - E (Print This Recipe!)
1tsp. coconut oil
1 chicken breast, cooked, sliced into thin strips
1 bell pepper (any color will do, I used orange), thinly sliced
2 handfuls spinach leaves
2 TBS. fish sauce
ginger, to taste
red chili pepper flakes, to taste
1 cup brown rice, cooked
saute the pepper and spinach in the coconut oil. When cooked through, add in the cooked chicken breast slices. Pour fish sauce over the veggies and chicken, and sprinkle the ginger and chili flakes on top. Stir all together for about a minute or two. Set aside.
Cook the brown rice, or heat up pre-cooked rice. Place on a plate, and place the veggies and chicken mixture over it. ENJOY!
*you can either use pre-made brown rice, or minute brown rice. (make sure there are no off-plan ingredients added)

Trim Healthy Mama Recipe Review: Chicken Parmy

Cost: inexpensive (especially if you make your own baking blend)

This recipe is AMAZING! The whole family LOVES it! It is often requested, and gets shouts of joy when they know it's cooking.
I occasionally add cheddar cheese to the top. I use a lot of sauce so the chicken is "swimming" in it. I use my homemade baking blend, but using the THM baking blend would be just as cost effective. It cooks in 30 minutes or so. Super easy, and did I mention, DELICIOUS???!!! It is a meal we have at least 2-3 times per month. I use a pizza sauce with no added sugar.
This is honestly one of my favorite meals! I add Let 'Er Rip Side Salad with Rohnda's Ranch Dressing to make it a full meal.

Trim Healthy Mama for "PrePackaged Pams"
There's a new girl in THM Town!! Her name is PrePackaged Pam, and she loves all things super easy, or straight out of the package. I can relate, as I love being able to open something, heat it for mere minutes, and have a great meal. I've compiled a list of my favorite prepackaged foods that all PPPs will love along with where they are typically found in a grocery store.
1. Frozen, Steamable Veggie Blends (Freezer Section)
I seriously LOVE these!! All I have to do is throw the package into the microwave (Purists, look away!!), take it out, dump it into a bowl, and add salt, pepper, and lots of BUTTAH...and Ta-Da! A great snack, or side dish! Or, I can eat them straight out of the bag.
2. Umpqua Oats (Blueberry Apple flavor, it's unsweetened.) {Natural/Organic cereal aisle}
This is how I mostly get my E foods in. I just open the container, pour water in, microwave it for 1 minute, let it cool slightly, add in my sweetener and I am eating a delicious meal! (Ingredients: Whole rolled oat groats, Brown flax seeds, Organic chia seeds, Freeze dried apples, and Freeze dried blueberries.)
3. Minute Brown Rice (Asian aisle, usually)
This little box is amazing! Brown rice takes FOREVER to cook, even in my rice cooker!! But with Minute Rice, it's a snap! (Uncle Ben's has "Ready Rice" packs which cook in 90 seconds; but they may contain canola or sunflower oils, which are not on plan.)
4. Oscar Meyer P3 Protein Packs (Lunch meat section
This one is great for when you are on the go. It is just meat, cheese, and nuts. My personal favorite is the Almond, Colby, Chicken one. Such a great, prepackaged snack!
5. Precooked Chicken Strips (Frozen section)
I love the convenience of these! If I want a quick salad, I can just tear up some lettuce (or open a mixed bag) add chicken and veggies and dressing and eat away.
6. Bagged Coleslaw Mix (Produce section, bagged salads)
This product is fantastic. I can make Eggroll in a Bowl in about 15 minutes with this beauty! It is also my go-to product for coleslaw for church fellowship time.
7. Riced Cauliflower bags (Produce section, bagged veggies)
I haven't had the pleasure of finding this product yet. But all of the Mamas who have, rave profusely about it. It saves so much time and energy.
8. Braggs All Natural Apple Cider Vinegar Drink (Natural/Organic vinegar section)
It's GGMS without having to mix it yourself, and it comes in a few flavors that are on plan. (there are a few that are NOT on plan, so be wary.)
9. Frozen Meatballs (Frozen meat section)
One of my personal favorites is the premade, precooked frozen meatballs! Make sure the ingredients are all on plan, of course. (i.e., no fillers, sugar, etc.)
10. Atkins Bacon Scramble (Frozen meals section)
This one I happened upon by accident just recently. Ingredients are bacon and eggs. If your in a hurry in the morning, it would be a great way to get a healthy S meal in.
11. Breyer's Carb Smart Ice Cream (Frozen Dairy section)
This is my favorite of all pre-made things! I liked the sister's Tummy Tucking Ice Cream recipe, but just don't want to have to make my ice cream all of the time, you know? This product is fabulous for a once in a while treat. It comes in Vanilla or Chocolate.
12. Rotisserie Chicken (Deli section/pre-made meals section)
When your strapped for time, and need a meal as soon as you get home, grab a rotisserie chicken! It's so convenient, and if there is leftovers, you can easily use them for other meals. And you can use the bones for broth or stock!
13. Bagged Salads (Produce department)
With this product, all you have to do is add a few more veggies (if you want), drizzle some dressing on, and enjoy.
14. Pre-cut fruits and veggies (Produce section)
I love these for picnics or when I'm doing the weekly park dates with the church moms. Super easy and convenient!

Trim Healthy Mama When You're in a Pinch
This last Sunday, I had a package of chicken breasts in the fridge, and no time to make the crockpot dish I had planned on! But, the THM sisters, Serene & Pearl, gave us a lovely cookbook, so I got mine out, and perused the pages; looking for ANYTHING I could make. Lo and behold, I found a gem! It was Creamy Herb Chicken. I had all of the ingredients! So I whipped it together, and put it in the oven. I then went on the hunt for side dishes I could muster together. Thirty minutes later, I had a full, delicious, on-plan meal! Creamy Herb Chicken with a side of Let 'Er Rip Salad topped with homemade Ranch dressing, and my very own concoction, Berry Cheesecake Whip.
So, when you are strapped for time, didn't get home in time, or just plain can't figure out what to make...CHECK THE COOKBOOK!! There are so many little recipes hidden in there! This one was a HUGE hit in the family.
Really, what is easier than ripping a head of lettuce, and putting dressing on top?? (Nothing!) It is now my go-to side dish.
